Eggplants are also known as aubergines or brinjal. Even though considered vegetables, are actually fruits, as they grow from a flowering plant and contain seeds.
Commonly we associate the dark purple to eggplants, but there are other varieties in red, green or black.
Eggplants have few calories and are a great nutritional source of vitamins, minerals, and fibers. From one serving you can nourish your body with vitamins A, C, K and minerals like calcium, iron, magnesium, phosphorus, and potassium.
Among the health benefits associated to aubergines, studies show that it strengthens the heart through the pigment anthocyanins, helps in the prevention of anemia as a source of iron, encourages balanced blood sugar levels with its high fiber content, maintains good eye health with its source of antioxidants like lutein and zeaxanthin, and it works like a natural laxative, improving digestion as it is rich in fiber.
